Turmeric Cupcakes with Honey and Cream Cheese Frosting
Prep Time: 30-45 mins
Cook time: 15-20 mins
Serves: About 12 cupcakes
Ingredients:
Turmeric Cupcakes:
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 3/4 cup vegetable oil
- 1 1/4 cup milk
- 1 tablespoon WillYUM Spice Turmeric
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
Honey Cream Cheese Frosting:
- 1/2 cup butter at room temperature
- 1/4 cup cream cheese
- 1/3 cup honey
- 2 1/4 cups powdered sugar (another 1/4 cup can be added to reach desired consistency)
Instructions:
Cupcakes:
- Preheat oven to 350 degrees and line cupcake tin.
- In a large bowl, use a mixer to combine sugar, vegetable oil, and milk.
- In a separate large bowl, sift flower, turmeric, salt, and baking powder.
- Add flour mixture to sugar mixture and mix until well combined.
- Pour the batter into cupcake tins.
- Bake for 15-20 minutes, until a toothpick comes out clean when put into the center of the largest cupcake
- Allow to cool before icing.
Honey Cream Cheese Frosting:
- Using a mixer, mix butter until light and fluffy
- Add powdered sugar, honey, and cream cheese until evenly combined
- Continue to mix until frosting attains desired fluffy consistency
- Scoop into piping bag and store in fridge (or freezer for prolonged storage).
- Pipe onto cupcakes once cool and store in fridge or cool, dry place.
